ABSTRAK
Penelitian mengenai “Identifikasi Persentase, Keempukan dan Warna
Daging Primal Cut Carcass Domba Lokal (Ovis aries) Jantan Yearling” telah
dilaksanakan pada April 2013. Tujuan penelitian ini adalah untuk mengetahui
presentase, keempukan dan warna daging primal cut carcass domba jantan
yearling. Metode penelitian yang digunakan adalah deskriptif untuk 5 ekor domba
jantan yearling. Hasil penelitian diperoleh bahwa rataan persentase primal cut
carcass domba jantan yearling masing-masing dengan nilai rata-rata leg sebesar
27,88%, shoulder 27,01%, rack 6,82% dan loin 9,14%. Keempukan primal cut
carcass rata-rata hasilnya adalah leg sebesar 51,47 mm/det, shoulder 56,40
mm/det, rack 58,73 mm/det dan loin 78,80 mm/det. Warna daging primal cut
carcass berwarna merah kecoklatan dengan nilai rata-rata leg 4, shoulder 4, rack
4 dan loin 4.

ABSTRACT
The study of “Identification of Carcass Precentage, Meat Tenderness and
Meat Colour of Primal Cut Carcass Male Sheep Local (Ovis aries) Yearling” had

been was condunted from April 27th-30th 2013. The purpose of the study was to
know precentage of meat tenderness and colour primal cut carcass local
yearling. The method of study was deskriptif for 5 local yearling. The result was
percentage primal cut carcass local yearling with carcass weight 10,98 kg was
leg 27,88%, shoulder 27,01%, rack 6,82% and loin 9,14%. The result for
tenderness primal cut carcass was leg 51,47 mm/sec, shoulder 56,40 mm/sec,
rack 58,73 mm/sec and loin 78,80 mm/sec. And the result meat colour primal cut
carcass was maroon with leg 4, shoulder 4, rack 4 and loin 4.
