Abstract
Carbohydrates as ono of the maCto nuirients have significant role in the food pallem in which 60-70% of the
recommended energy requirement comes from carbohydrates, and generally being a stapte food. II is unfortunate that
almost aU people In tndonesla have made rice as Ihe main source of carbohydrales and became a slaple food. This
slluation affects the high dependence on rice. This study aim. to modify manggadong as local wisdom into
manggadong rice that is rice mixed wilh 4 type. of cassava flour in cooking rice and analyze energy consumption and
