T h e cocoa bean p u l p j u i c e i s a w a s t e o f cocoa e s t a t e
w h i c h h a s n o t been w e l l u t i l i z e d so far. Amounted a t a b o u t
10 % o f the b e a n w e t w e i g h t , t h i s w a s t e c o u l d be u s e d a s a
s u b s t r a t f o r e t h a n o l f e r m e n t a t i o n since i t s s u g a r content
i s r e l a t i v e l y h i g h i - e . l o - 15 %. T h e o b j e c t i v e o f t h i s
e x p e r i m e n t was t o s t u d y the c o n t i n u o u s p r o d u c t i o n o f e t h a nol from t h e w a s t e u s i n g i m m o b i l i z e d Saccharomyces cerev i s i a e . I m m o b i l i z a t i o n was c a r r i e d o u t u s i n g e n t r a p m e n t
system i n c a l c i u m a l g i n a t e b e a d s . F e r m e n t a t i o n was run
c o n t i n u o u s l y i n a packed b e d r e a c t o r a t various d i l u t i o n
r a t e s and an i n i t i a l s u g a r c o n t e n t o f 15 %.
The r e s u l t s
showed t h a t a d i l u t i o n r a t e o f 0.028 hour-',
w h i c h was
e q u i v a l e n t t o a r e s i d e n c e t i m e o f 36 h o u r s , gave the h i g h e s t ethanol c o n c e n t r a t l o n i .e. 6.9 % ( w / v ) and a s u g a r - t o e t h a n o l c o n v e r s i o n e f f i c i e n c y o f 95 %. T h i s r e s u l t was
h i g h e r than t h a t o f a b a t c h f e r m e n t a t i o n .
ABSTRAK

Limbah c a i r a n p u l p k a k a o merupakan l i m b a h yang belum
banyak d i m a n f a a t k a n . Limbah i n i jumlahnya s e k l t a r 1 0 %
d a r l b e r a t basah b i j i kakao d a n mengandung g u l a s e k i t a r 10

15 % s e h i n g g a d a p a t d i g u n a k a n s e b a g a i bahan b a k u pembua t a n e t a n o l . P e n e l i t i a n i n i b e r t u j u a n u n t u k memanfaatkan
limbah c a i r a n pulp kakao menjadi e t a n o l m e l a l u i f e r m e n t a s i
sinambung menggunakan sel Saccharomyces c e r e v i s i a e i m o b i l .
