Abstract
This aims of this research were to determine the antioxidant activity and IC50 of
marsh fleabane leaf extract, established the total phenolic content, and conducted an
organoleptic test of tempe, in which the soybeans were soaked with marsh fleabane leaf
extract at various concentrations (0%, 1%, 3%, 4.5%, and 6%). The results showed that
the highest antioxidant activity was obtained from soaked tempe with a 4.5% marsh
fleabane leaf extract (90.96% ± 1.81) while the antioxidant activity of tempe without
marsh fleabane leaf extract was only 63,07% ± 4,65 and IC50 of marsh fleabane leaves
extract was 0.15g/100mL aquadest. The highest total phenolic content was obtained
from soaked tempe with a 6% marsh fleabane leaf extract (340,80 ± 40,33 mg/100g)
while total phenolic content of tempe without marsh fleabane leaves extract was only
129 mg/100 g ± 24.31. The results of the organoleptic test showed that the preferred
organoleptic test was obtained from tempe without marsh fleabane leaf extract (3.96 of
5). The preferred tempe, in which the soybeans had been soaked at various
concentrations with marsh fleabane leaf extract ,was 1.5% (3.14 of 5).
