The purpose of this study was to determine the quality of goat milk by feeding forage cassava leaves and concentrate on a different ratio. This approach is expected to have a positive influence on the quality of Etawah crossbreed milk. Research will be carried out in Etawah crossbreed farm owned by Bapak Yusuf is located at Street Kapas Kec.Hamparan Perak Desa Klambir V, Medan. Analysis of the chemical composition of milk conducted at the Laboratory of Food Technology of the Faculty of Agriculture, University of North Sumatra. This study will be carried out during the three month in June to October 2014. The study began by giving a proportion of forage treatment of various concentrate of the research object after the morning and evening milk in the dairy and mixed with the same comparison and further analysis of the chemical composition of milk such as protein, fat, specific gravity, dry matter and dry matter without fat.
The experimental design used in this study is a latin square design (LSD) with 3 treatments and 2 replications. This study consisted of treatment P0: 100% forage cassava leaves; P1: cassava leaves 80% forage and 20% concentrate and P2: cassava leaves 60% forage and 40% concentrate. Results of analysis of variance showed that the ratio of various forage cassava leaves (Manihot utilisima) with the concentrate is not significant effect between treatments (P> 0.05) on protein, dry matter, fat and dry matter without fat milk ingredients, but significant (P 0,05) terhadap protein, bahan kering, lemak dan bahan kering tanpa lemak susu (solid non fat), namun berpengaruh nyata (P 0.05) on protein, dry matter, fat and dry matter without fat milk ingredients, but significant (P 0,05) terhadap protein, bahan kering, lemak dan bahan kering tanpa lemak susu (solid non fat), namun berpengaruh nyata (P
