5. KESIMPULAN DAN SARAN

5.1. Kesimpulan

1. Pembuatan daging teripang dalam bentuk hidrolisat protein teripang HPT, konsentrat protein teripang KPT, dan isolat protein teripang IPT berpengaruh terhadap kadar asam amino bebas penstimulasi insulin, seperti leusin, arginin, lisin, alanin, fenilalanin, isoleusin, dan metionin. HPT memiliki kadar asam amino bebas penstimulasi insulin jauh lebih banyak dibandingkan KPT dan IPT yaitu secara berturut-turut 1.77, 0.14, dan 0.12 Diduga asam-asam amino bebas pada HPT tersebut yang berperan dalam meningkatkan sekresi insulin. 2. Hidrolisat protein teripang HPT memiliki daya hambat tertinggi terhadap aktivitas enzim α-glukosidase secara in vitro dengan persentase penghambatan 72.48 pada konsentrasi 10 000 ppm, sedangkan isolat protein teripang IPT adalah 58.21, dan konsentrat protein teripang KPT 56.33. 3. Aktivitas hipoglikemik HPT, KPT, dan IPT pada tikus percobaan hiperglikemik dipengaruhi oleh konsentrasi yang diberikan. Konsentrasi HPT, KPT, dan IPT masing-masing 300 mgkg bb memiliki daya hipoglikemik terbaik dibandingkan konsentrasi 100 dan 200 mgkg bb. 4. Pemberian HPT, KPT, dan IPT pada konsentrasi 300 mgkg bb pada tikus DM mampu menurunkan kadar glukosa darah masing-masing sebesar 53.9, 27.6, dan 6.6. Disamping itu, juga dapat meningkatkan berat badan masing- masing sebesar 22.6, 17.3, dan 12.9. 5. Pemberian HPT, KPT, dan IPT 300 mg kg bb pada tikus percobaan mampu mempertahankan aktivitas SOD dan tidak mampu mempertahankan aktivitas GPx dan katalase hati. 6. Pemberian HPT 300 mgkg bb pada tikus DM menghasilkan jumlah pulau Langerhans yang tidak berbeda dengan kelompok tikus kontrol negatif KN, sehingga memiliki kemampuan lebih baik dalam menghambat laju penurunan jumlah pulau Langerhans pankreas dibandingkan kelompok tikus DM yang diberi KPT dan IPT pada konsentrasi yang sama. 7. Pemberian HPT 300 mgkg bb pada tikus DM mampu menghambat laju kerusakan sel beta pulau Langerhans pankreas dibandingkan kelompok tikus DM yang diberi KPT dan IPT, meskipun masih lebih rendah dibandingkan tikus kontrol negatif KN. 5.2. Saran 1. Perlu dilakukan penelitian lanjutan tentang pengaruh konsumsi pangan fungsional yang mengandung hidrolisat protein teripang terhadap penderita DM secara terkendali dan dengan menu terkontrol sesuai kebutuhan gizi masing-masing. 2. Faktor-faktor potensial yang menyebabkan kerusakan pulau Langerhans dan sel beta pankreas perlu dipelajari lebih lanjut, demikian pula dengan peluang perbaikan atau penghambatan tingkat kerusakannya dengan perlakuan hidrolisat protein teripang sebagai pangan fungsional. 3. Perlu dilakukan penelitian lanjutan tentang jenis dan cara pengemasan, serta daya simpan pangan fungsional yang menggunakan hidrolisat protein teripang. 4. Perlu penelitian lebih lanjut tentang kemungkinan peran peptida bioaktif yang terbentuk selama proses hirolisis dan senyawa bioaktif lainnya terhadap peningkatan sekresi insulin oleh sel beta pankreas.
