ABSTRACT
The  aims  of  the  study  are  to  determine  the  minimum  inhibitory concentration  MIC  of  L.  plantarum  L.  lactis  FNCC  0086  supernatant  in
inhibiting  the  growth  of  Staphylococcus  aureus  ATCC  25923  and  Escherichia coli  ATCC  25922  test  bacteria,  determine  the  effect  of  the  additional  L.
plantarum  L.  lactis  FNCC  0086  supernatant  and  cows  milk  fat  into  dangke against  the  growth  of  test  bacteria.  Minimum  inhibitory  concentration  was
determined  based  on  the  lowest  concentration  of  the  supernatant  that  show  no growth in the media. Data of pathogenic bacteria growth analyzed with ANOVA

factor was the addition of L. plantarum L.  lactis FNCC 0086  supernatant with  or  without  addition  of  supernatant  and
the second factor is the addition of fat content 1 and 2 and time observations were made on days 0, 2nd, 4th, 6th, and 8th. The results which show significantly
different, will be continued by using Duncan test. Results showed that the filtrate of fermented L. plantarum L. lactis FNCC 0086 was able to inhibit the growth
of  S.  aureus  ATCC  25923  and  E.  coli  ATCC  25922  in  vitro  with  the  minimum inhibitory  concentration  MIC  was  10.  The  L.  plantarum  L.  lactis  FNCC
0086  supernatant  was  able  to  depress  the  growth  of  E.  coli  ATCC  25922  in dangke, but S. aureus
