Abstract
This research aims to know the inluence of handling before slaughter, especially the provision of oralit solution for slaughtering delay to the status of physiology, quality and savety meat. Thus, pigs used as many as 48
tail with body weight ±SD 96 ±1.55 kg. The results showed that physiologically, all the pigs on the l
is experiencing stress. The slaughtering delay causing a decrease in physical quality of the meat P0.05. In a sample of meat, found microbes with varying
quantities, but still on safe limits and logarithmic growth occurred with the amount considerably before 10 hours of storage and decomposing at 18 hours storage at room temperatures 27-29
C. Based on the results of the research, it can be concluded that slaughtering delay truncation causes a decrease
in the quality of the meat, the status of physiology, and safe of meat. The provision of G-G solution can reduce the impact of the delay of slaughtering. Overall, the best value is obtained at l
